Recipe Notes

Additional Tips

  • To achieve the signature flaky layers, let the dough rest for at least 20 minutes before rolling and folding, which allows the gluten to relax and makes for an easier, more delicate fold.
  • For a flavorful filling variation, add crumbled paneer, chopped green chilies, and fresh coriander to the capsicum and sweet corn mixture before stuffing the paratha.
  • If you want a crispier texture, cook the paratha on medium-high heat and apply clarified butter generously during the final stage of toasting on the skillet.
  • Lifafa Paratha freezes well—assemble and partially cook the parathas, then let them cool, stack with parchment between each, and freeze. Reheat directly on a hot skillet straight from the freezer for a quick breakfast.
