  • 4 strands Saffron Strands kesar, soaked in 1 tablespoon warm water for at least 15 minutes to release color and flavor

Prepare the Dough

  • Combine flour, salt, powdered sugar, cardamom powder, and soaked saffron (with its soaking liquid) in a large bowl. Gradually add milk, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic. Cover and let rest for at least 20 minutes.

Roll and Cook the Paratha

  • Divide the dough into equal-sized balls. Roll each ball into a thin, circular paratha. You can optionally create layered paratha by rolling the dough, sprinkling with ghee and folding the dough. Roll out again.

Cook on Tawa (Griddle)

  • Heat a tawa or griddle over medium heat. Add 1 teaspoon of ghee and 1 teaspoon of vegetable oil. Cook each paratha for 2-3 minutes per side, or until golden brown and slightly crispy. Brush cooked parathas with additional ghee for extra richness. Serve hot.
