Ingredients
Dry Ingredients
- 2 cup All-Purpose Flour maida
- 1.5 tsp Salt or to taste
- 3 tsp Sugar powdered
- 1 tsp Cardamom Powder elaichi
Wet Ingredients
- 1 cup Milk whole milk recommended
- 4 strands Saffron Strands kesar, soaked in 1 tablespoon warm water for at least 15 minutes to release color and flavor
Cooking Oil
- 3 tbsp Ghee use for cooking and brushing
- 2 tbsp Vegetable Oil for cooking
Instructions
Prepare the Dough
- Combine flour, salt, powdered sugar, cardamom powder, and soaked saffron (with its soaking liquid) in a large bowl. Gradually add milk, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic. Cover and let rest for at least 20 minutes.
Roll and Cook the Paratha
- Divide the dough into equal-sized balls. Roll each ball into a thin, circular paratha. You can optionally create layered paratha by rolling the dough, sprinkling with ghee and folding the dough. Roll out again.
Cook on Tawa (Griddle)
- Heat a tawa or griddle over medium heat. Add 1 teaspoon of ghee and 1 teaspoon of vegetable oil. Cook each paratha for 2-3 minutes per side, or until golden brown and slightly crispy. Brush cooked parathas with additional ghee for extra richness. Serve hot.
