Ingredients
For the Mango Layer
- 1 cup Mango Puree use fresh mango puree, or blend 1 cup of fresh mango until smooth. alternatively, use store-bought mango puree.
- 1/2 cup Heavy Cream
- 1/4 cup Sugar adjust to taste, granulated
- 1 tbsp Water
- 1 tsp Gelatin unflavored powder gelatin
For the Strawberry Layer
- 1 cup Strawberry Puree use fresh strawberry puree, or blend 1 cup of fresh strawberries until smooth. you may also use high-quality store-bought strawberry puree.
- 1/2 cup Heavy Cream
- 1/4 cup Sugar adjust to taste; omit if using a pre-sweetened puree., granulated
- 1 tbsp Water
- 1 tsp Gelatin unflavored powder gelatin

Prepare the Mango Layer
- In a small saucepan, combine mango puree, heavy cream, and sugar. Heat over medium-low heat, stirring constantly, until the sugar dissolves.
Bloom the Gelatin
- In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes to bloom.
Combine and Set
- Once the mango mixture is warm, stir in the bloomed gelatin until completely dissolved. Remove from heat and pour into serving glasses, filling them about halfway.
- Refrigerate for at least 45 minutes, or until set.
Prepare the Strawberry Layer
- Repeat steps 1-3 above, substituting the mango puree with strawberry puree. Adjust sugar as needed depending on the sweetness of your puree.
Layer and Chill
- Once the mango layer is set, gently pour the strawberry layer on top. Refrigerate for at least another 45 minutes, or until completely set. Serve chilled.
