Instructions

  • In a saucepan, combine the full-fat milk, full-fat cream, agar-agar powder, and sugar.
  • Heat the mixture over low heat, stirring constantly until the agar-agar powder and sugar are completely dissolved. This helps ensure a smooth and stable panna cotta.
  • Continue to simmer gently for about 10 minutes, stirring occasionally, to fully activate the agar-agar.
  • Remove the saucepan from the heat.
  • In a separate bowl, whisk together the remaining milk, condensed milk, almond extract, and vanilla extract.
  • Pour the warm cream mixture into the milk mixture and whisk thoroughly to combine.
  • Divide the mixture into seven equal portions.
  • Tint each portion with a different food coloring, creating the colors of the rainbow (red, orange, yellow, green, blue, indigo, and violet). Start with just a few drops of color and add more until you achieve the desired intensity.
  • Pour the first colored layer into individual glasses or small serving dishes. Refrigerate for 10-15 minutes, or until set.
  • Repeat the process with the remaining colors, layering one on top of the other after each previous layer has set. This creates the beautiful rainbow effect.
  • Once all layers are set, chill the panna cotta in the refrigerator for at least 2 hours, or until completely firm.

Recipe Notes

Good To Know

  • For perfectly defined rainbow layers, allow each colored layer to set completely at room temperature (about 15-20 minutes) before gently pouring the next one on top. Pouring over the back of a spoon helps prevent layers from mixing.
  • If you’d like a crunch element, sprinkle each layer with a thin dusting of crushed vegan cookies, toasted coconut, or granola before the next layer is added for a surprise texture between colors.
  • To make individual servings party-friendly, pour the panna cotta mixture into clear plastic cups or silicone molds; unmold just before serving for a stunning presentation.
  • For a nut-free version, replace almond extract with additional vanilla or a hint of orange extract, and use oat or coconut milk instead of almond milk to keep it allergen-friendly.

Expert Tips

  • For vibrant colors, use natural food coloring derived from fruits and vegetables. These can be found online or at specialty stores.
  • Agar-agar can be sensitive to temperature changes. Ensure your layers are not too hot when pouring, or they may not set properly.
  • Get creative with your layers! Try using different flavors of plant-based milk and extracts to complement the colors.

Storage Instructions

  • Store leftover panna cotta in an airtight container in the refrigerator for up to 3 days. The colors may bleed slightly over time, but the flavor will remain delicious.
