Ingredients
Bottle Gourd Preparation
- 2 cup Bottle Gourd lauki or kaporkand, peeled and grated; remove the center part and seeds. a food processor can be used for larger quantities.
Spices and Flavorings
- 1 tsp Cardamom Powder elaichi
Dairy and Sweeteners
Nuts and Garnishes
- 1/2 cup Nuts almonds, as preferred., cashews, mixed, pistachios – grated or chopped
Instructions
Prepare the Bottle Gourd
- Wash, peel, and grate the bottle gourd, removing the center and seeds.
Sauté the Bottle Gourd
- Heat the desi ghee in a pan or pot over medium heat. Add the grated bottle gourd and sauté until it softens and releases its moisture, stirring frequently. This will take about 7-8 minutes.
Add Milk and Condensed Milk
- Once the bottle gourd is cooked down, add the milk and condensed milk. Stir well to combine and bring the mixture to a gentle boil.
Simmer and Thicken
- Reduce the heat to low and simmer, stirring occasionally, until the milk is mostly absorbed and the mixture thickens. This should take approximately 10-12 minutes.
Incorporate Sugar and Nuts
- Add the sugar and grated nuts. Continue to cook and stir continuously to prevent sticking until the mixture is thick and the remaining moisture is evaporated. This will take another 3-4 minutes.
Finish and Serve
- Remove from heat and stir in the cardamom powder. Serve the Lauki Ka Halwa warm or at room temperature.
