Instructions

Prepare the Bottle Gourd

  • Wash, peel, and grate the bottle gourd, removing the center and seeds.

Sauté the Bottle Gourd

  • Heat the desi ghee in a pan or pot over medium heat. Add the grated bottle gourd and sauté until it softens and releases its moisture, stirring frequently. This will take about 7-8 minutes.

Add Milk and Condensed Milk

  • Once the bottle gourd is cooked down, add the milk and condensed milk. Stir well to combine and bring the mixture to a gentle boil.

Simmer and Thicken

  • Reduce the heat to low and simmer, stirring occasionally, until the milk is mostly absorbed and the mixture thickens. This should take approximately 10-12 minutes.

Incorporate Sugar and Nuts

  • Add the sugar and grated nuts. Continue to cook and stir continuously to prevent sticking until the mixture is thick and the remaining moisture is evaporated. This will take another 3-4 minutes.

Finish and Serve

  • Remove from heat and stir in the cardamom powder. Serve the Lauki Ka Halwa warm or at room temperature.
