Ingredients
Bottle Gourd Preparation
- 1 medium Bottle Gourd grated, lauki
- 1 cup Water for blanching
Spices & Flavorings
- 1 tbsp Vegetable Oil
- 3 Peppercorns black
- 3 Cloves
- 1/4 tsp Cardamom Powder elaichi
- 1/2 cup Sugar
- 3 tsp Lemon Juice
- 1.5 tsp Salt or to taste
Garnish
- 1 tbsp Raisins
Instructions
Prepare the Bottle Gourd
- Blanch the grated bottle gourd in 1 cup of boiling water for 5 minutes. Drain well and set aside.
Sauté the Spices
- Heat the vegetable oil in a pan over medium heat. Add the black peppercorns, cloves, and cardamom powder. Sauté until fragrant, about 30 seconds.
Cook the Chutney
- Add the blanched bottle gourd and sugar to the pan. Cook, stirring frequently, until the mixture thickens and the bottle gourd is tender, about 10-12 minutes.
Finish and Garnish
- Stir in the salt and lemon juice. Taste and adjust seasoning as needed. Remove from heat and garnish with raisins.
Serve
- Serve the bottle gourd chutney warm or at room temperature. Enjoy!
