Ingredients
For the Bottle Gourd Fritters
- 200 gm Bottle Gourd
- 2 tbsp Gram Flour besan
- 2 tbsp Sattu Flour
- 2 tsp Ginger paste
- 1 tsp Pepper black
- 1 tsp Nigella Seeds kalonji
- Salt to taste
For the Alu Bukhara Gravy
- 1 tbsp Onion paste
- 1 tsp Caraway Seeds shahi jeera
- 1 tsp Turmeric powder
- 1 tsp Cumin seeds
- 1 tsp Chili Powder red
- 1 tbsp Alu Bukhara Paste dried plum paste
- 1 tsp Garam Masala
Instructions
- Peel and cube the bottle gourd. Boil until tender, then drain, reserving the cooking liquid. This liquid adds a subtle sweetness and enhances the gravy's flavor.
- In a mixing bowl, combine the boiled bottle gourd, gram flour, sattu flour, ginger paste, black pepper, onion seeds, and salt. Mix well to form a dough-like consistency.
- Shape the mixture into small fritters. Heat oil in a pan and fry the fritters until golden brown and crispy. Set aside.
- In the same pan, heat a little more oil. Add cumin seeds and caraway seeds. Once they splutter, add the onion paste and sauté until translucent.
- Add the alu bukhara paste and sauté for a minute to release its flavors. Then, add the turmeric powder, red chili powder, and salt. Sauté for another minute.
- Pour in the reserved bottle gourd cooking liquid. Bring to a simmer and cook until the gravy thickens to your desired consistency. Adding the cooking liquid creates a cohesive and flavorful gravy.
- Gently place the fried bottle gourd fritters into the gravy. Simmer for a few minutes to allow the fritters to absorb the flavors of the gravy.
- Transfer the Lauer Bahar to a serving dish. Garnish with fresh grated coconut, fresh coriander leaves, and cucumber slices for a refreshing touch.
