Ingredients
For the Fritters
- 1/2 bowl Bottle Gourd grated
- 2 tbsp Gram Flour
- 2 tbsp Rice Flour
- 1 tsp Onion Seed
- 1 tsp Pepper black, crushed
- Salt to taste
For the Gravy
- 1 Onion chopped, large
- 10-12 clove Garlic minced
- 2 Bell Peppers capsicum, chopped
- 5 Mushroom chopped
- 1 tbsp Tandoori Masala
- 1 tbsp Tandoori Paste
- 1 tsp Chili Powder red
- 2 tbsp Oil
- 1/4 cup Water reserved from grated bottle gourd
- 1 tsp Jowar Flour sorghum flour
- 1 tsp Fruit Vinegar
- Herb for garnish (optional), fresh
Instructions
- Grate the bottle gourd and squeeze out the excess water. Reserve the water for the gravy. In a mixing bowl, combine the grated bottle gourd, gram flour, rice flour, onion seeds, crushed black pepper, and salt.
- Mix the ingredients thoroughly until a dough forms. Shape the dough into small, lemon-sized fritters.
- Heat oil in a pan and fry the fritters until golden brown and crispy. Remove and set aside.
- In the same pan, add the minced garlic and sauté until fragrant. Add the chopped onion and bell peppers. Cook until the onions are translucent and the peppers are slightly softened.
- Add the chopped mushrooms, salt, tandoori masala, red chili powder, and tandoori paste to the pan. Sauté for a few minutes to allow the spices to bloom. This enhances their flavor.
- In a small bowl, whisk together the reserved bottle gourd water and jowar flour until smooth. This will help thicken the gravy.
- Pour the bottle gourd water mixture into the pan with the vegetables. Stir well to combine. Bring the gravy to a simmer, allowing it to thicken slightly.
- Add the fruit vinegar to the gravy. This adds a touch of tanginess that balances the rich flavors. Stir in the fried bottle gourd fritters.
- Garnish with fresh herbs, if desired. Serve hot and enjoy!
