  • Peel the sponge gourd and grate it. Set aside.

  • Heat the mustard oil in a pan over medium heat. Adding mustard oil to a hot pan helps to temper its strong flavor.

  • Add the whole dried red chilies and onion seeds to the hot oil. Sauté for about 30 seconds until fragrant.
  • Add the turmeric powder, cumin seeds, and dried plums (aloo bukhara) to the pan. Sauté for another minute until fragrant.
  • Add the grated sponge gourd and chili powder to the pan. Season with salt to taste. Sauté for 2-3 minutes, stirring frequently, until the sponge gourd starts to soften.

  • Reduce the heat to low, cover the pan, and cook for 5-7 minutes, or until the sponge gourd is tender. Stir occasionally to prevent sticking.
