Instructions
Prepare the Dough
- Combine whole wheat flour, all-purpose flour, and 1 tablespoon of oil in a bowl. Gradually add water, mixing until a soft, pliable dough forms. Cover and let rest for 5 minutes.
Prepare the Filling
- Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the chopped onion and sauté until softened. Add the shredded cabbage, grated carrot, chopped bell pepper, and green beans. Stir-fry for 5-7 minutes, until the vegetables are tender-crisp.
- Add salt, black pepper, soy sauce, and vinegar. Stir to combine and cook for another minute.
- Stir in the boiled noodles and remove from heat.
Assemble the Spring Rolls
- Roll out small portions of the dough into thin circles or wrappers.
- Place a spoonful of the vegetable filling onto one half of each wrapper. Fold the other half over the filling. Moisten the edges with water to seal.
- Fold in the sides and tightly roll into a cylinder shape. Seal the ends.
Fry and Serve
- Heat the remaining oil in a wok or deep fryer to 350°F (175°C). Carefully fry the spring rolls in batches until golden brown and crispy. Remove from oil and drain on paper towels. Serve hot with your favorite dipping sauce (e.g., sweet chili sauce).

Expert Tips for Perfect Spring Rolls
- For extra crispy spring rolls, allow the dough to rest for at least 30 minutes before rolling.
- Don't overcrowd the pan when frying; fry in batches to ensure even cooking and crisping.
- For a healthier option, bake the spring rolls in a preheated oven at 400°F (200°C) for 15-20 minutes, or until golden brown and crispy.
- Get creative with your fillings! Add other vegetables like mushrooms, peas, or spinach for extra flavor and nutrition.
