- 2 tbsp Butter
- 1/3 cup Bell Peppers capsicum, chopped
- 1/4 cup Mozzarella Cheese shredded
- 1/2 tsp Pepper black, or to taste
- 1/4 tsp Salt or to taste
Instructions
- In a bowl, whisk the eggs until light and frothy. This incorporates air for a lighter omelet.
- Season the eggs with salt and pepper.
- Heat the butter in a non-stick skillet over medium heat. The butter should melt and coat the pan evenly.
- Pour the egg mixture into the hot skillet. Let it cook undisturbed for a minute or two, until the edges begin to set.
- Sprinkle the chopped bell pepper over the egg mixture.
- Once the omelet is mostly set but still slightly wet on top, sprinkle the shredded mozzarella cheese over one half.
- Carefully fold the other half of the omelet over the cheese. Gently press down with a spatula.
- Cook for another minute or two, until the cheese is melted and the omelet is cooked through. Serve immediately.
