For the Peppers

For the Filling

  • 1 cup Cauliflower mashed; you can use pre-mashed or rice cauliflower
  • 1 cup Pumpkin mashed; canned pumpkin puree works well
  • 2 tbsp Butter
  • 1 tsp Pepper freshly ground, black, preferred
  • 1.5 tsp Salt or to taste
  • 1 tsp Lemon Juice freshly squeezed is best
  • 1/2 tsp Cinnamon ground
  • 1/2 tsp Ginger ground
  • 1 tbsp Flaxseed Meal adds binding and nutrients
  • 1/2 cup Cheese grated cheddar, mozzarella, or a blend

Prepare the Peppers

  • Cut the bell peppers in half lengthwise. Remove the seeds and membranes.

Make the Filling

  • Melt butter in a pan over medium heat. Add mashed cauliflower and pumpkin. Season with salt, pepper, garlic (if using), onion powder, cinnamon, and ginger.
  • Sauté for 5-7 minutes, until slightly softened. Stir in lemon juice and flaxseed meal. Mix well.

Stuff and Bake or Pan-Fry

  • Spoon the filling evenly into the pepper halves.
  • Top generously with grated cheese.
  • For baking: Place stuffed peppers in a baking dish. Bake at 375°F (190°C) for 20-25 minutes, or until the cheese is melted and bubbly.
  • For pan-frying: Add a tablespoon of butter to a large skillet. Place stuffed peppers in the skillet, cover, and cook over medium-low heat for 15-20 minutes, or until the peppers are tender and the cheese is melted. Flip halfway through for even cooking.
