Ingredients
For the Peppers
- 2 Bell Peppers large, any color
For the Filling
- 1 cup Cauliflower mashed; you can use pre-mashed or rice cauliflower
- 1 cup Pumpkin mashed; canned pumpkin puree works well
- 2 tbsp Butter
- 1 tsp Pepper freshly ground, black, preferred
- 1.5 tsp Salt or to taste
- 1 tsp Lemon Juice freshly squeezed is best
- 1/2 tsp Cinnamon ground
- 1/2 tsp Ginger ground
- 1 tbsp Flaxseed Meal adds binding and nutrients
- 1/2 cup Cheese grated cheddar, mozzarella, or a blend
Optional
- 2 clove Garlic minced; adds depth of flavor
- 1/4 tsp Onion Powder
Instructions
Prepare the Peppers
- Cut the bell peppers in half lengthwise. Remove the seeds and membranes.
Make the Filling
- Melt butter in a pan over medium heat. Add mashed cauliflower and pumpkin. Season with salt, pepper, garlic (if using), onion powder, cinnamon, and ginger.
- Sauté for 5-7 minutes, until slightly softened. Stir in lemon juice and flaxseed meal. Mix well.
Stuff and Bake or Pan-Fry
- Spoon the filling evenly into the pepper halves.
- Top generously with grated cheese.
- For baking: Place stuffed peppers in a baking dish. Bake at 375°F (190°C) for 20-25 minutes, or until the cheese is melted and bubbly.
- For pan-frying: Add a tablespoon of butter to a large skillet. Place stuffed peppers in the skillet, cover, and cook over medium-low heat for 15-20 minutes, or until the peppers are tender and the cheese is melted. Flip halfway through for even cooking.
