  • 3 slices Wheat Bread thick-cut slices preferred, whole
  • 2 tbsp Butter for greasing the ramekins, melted

Prepare the Egg Mixture

  • Whisk eggs in a bowl until light and frothy.
  • Add the chopped onion, bell pepper, tomato, thyme, rosemary, red pepper flakes (if using), salt, and pepper. Mix well to combine.

Prepare the Bread Cups

  • Lightly grease three oven-safe ramekins or small oven-safe bowls with melted butter.
  • Trim the crusts from the bread slices and use a rolling pin to flatten them slightly.
  • Press each flattened bread slice into the bottom of a prepared ramekin to form a cup.

Bake the Omelet Cups

  • Pour the egg mixture evenly into the bread cups.
  • If using, sprinkle mozzarella cheese over the top.
  • Bake in a preheated oven at 200°C (400°F) for 20-25 minutes, or until the eggs are set and the bread is golden brown.
