Ingredients

- 3 Large Eggs
- 1/2 cup Onion finely chopped
- 1/2 cup Bell Peppers finely chopped; any color
- 1 Tomato finely chopped
- 1 tbsp Thyme chopped, fresh
- 1 tbsp Rosemary chopped, fresh
- 1/2 tbsp Pepper Flakes optional, red
- 1/4 tsp Pepper black, freshly ground
- 1.5 tsp Salt or to taste
For the Bread Cups:
- 3 slices Wheat Bread thick-cut slices preferred, whole
- 2 tbsp Butter for greasing the ramekins, melted
Optional additions:
- 1/2 cup Mozzarella Cheese for a cheesy twist, shredded
Instructions
Prepare the Egg Mixture
- Whisk eggs in a bowl until light and frothy.
- Add the chopped onion, bell pepper, tomato, thyme, rosemary, red pepper flakes (if using), salt, and pepper. Mix well to combine.
Prepare the Bread Cups
- Lightly grease three oven-safe ramekins or small oven-safe bowls with melted butter.
- Trim the crusts from the bread slices and use a rolling pin to flatten them slightly.
- Press each flattened bread slice into the bottom of a prepared ramekin to form a cup.
Bake the Omelet Cups
- Pour the egg mixture evenly into the bread cups.
