Pumpkin Preparation

Prepare the Pumpkin

  • Peel and cut the pumpkin into large pieces. Boil until tender, then mash thoroughly using a potato masher or fork.

Drain Excess Moisture

  • Place the mashed pumpkin in a fine-mesh sieve or colander to drain excess liquid. Let it sit for about 15-20 minutes.

Cook the Halwa

  • Heat the ghee in a heavy-bottomed pan or wok over medium heat. Add the drained pumpkin and cook, stirring frequently, until it starts to turn golden brown and slightly caramelized. This will take about 10-15 minutes.

Add Sweetener and Spices
