Ingredients
Pumpkin Preparation
- 1 kg Pumpkin peeled and cut into large pieces

- 1 tbsp Coconut grated, unsweetened

- 50 gm Almonds slivered or chopped
- 2 tbsp Melon Seeds roasted, also known as makhana
- 2 tbsp Raisins
Instructions
Prepare the Pumpkin
- Peel and cut the pumpkin into large pieces. Boil until tender, then mash thoroughly using a potato masher or fork.
Drain Excess Moisture
- Place the mashed pumpkin in a fine-mesh sieve or colander to drain excess liquid. Let it sit for about 15-20 minutes.
Cook the Halwa
- Heat the ghee in a heavy-bottomed pan or wok over medium heat. Add the drained pumpkin and cook, stirring frequently, until it starts to turn golden brown and slightly caramelized. This will take about 10-15 minutes.
Add Sweetener and Spices
- Stir in the sugar, cardamom powder, and grated coconut. Cook for another 5 minutes, or until the sugar dissolves and the mixture thickens slightly.

- Add the chopped almonds, roasted melon seeds, and raisins. Mix gently and cook for another 2-3 minutes.
