Ingredients
 

Halwa Ingredients

  • 1 cup Pumpkin peeled and grated
  • 1 cup Potato peeled and grated, sweet
  • 3/4 cup Milk condensed, or khoya (indian milk solids); if using khoya, reduce the sugar quantity by half.
  • 1/2 cup Sugar adjust to your sweetness preference. omit if using khoya and increase condensed milk.
  • 1/4 tsp Saffron soaked in 1 tablespoon of warm milk for 10-15 minutes to enhance color and flavor., threads
  • 3 tbsp Clarified Butter

Garnish

  • Optional Nuts almonds, cashews, chopped, etc., pistachios

Instructions
 

Preparation

  • Heat ghee in a non-stick pan over medium heat.
  • Add the peeled and grated pumpkin and sweet potato to the pan.
  • Stir-fry for 10-15 minutes, until slightly softened.

Adding Sweeteners & Milk Solids

  • Add condensed milk (or khoya) and sugar (if using). Stir well to combine.
  • Continue cooking for another 15-20 minutes, stirring occasionally, until the mixture thickens and the flavors meld.

Saffron Infusion

  • Stir in the saffron milk and cook for a couple of minutes, allowing the saffron to infuse the halwa.

Serving

  • Remove from heat and let it cool slightly.
  • Serve warm or at room temperature, garnished with chopped nuts (optional).
