Ingredients
For the Pori Urundai
- 4 cup Puffed Rice also known as pori
- 1 tsp Cardamom Powder or more, to taste
- 2 tbsp Ghee clarified butter, for greasing hands
Instructions
Prepare the Jaggery Syrup
- Heat 1 cup of jaggery and 1/4 cup of water in a pan over low heat. Stir continuously until the jaggery dissolves completely and the mixture begins to bubble and thicken.
Test for Soft Ball Consistency
- Prepare a small bowl of cold water. Drop a small amount of the jaggery syrup into the water. If it forms a soft, pliable ball that you can easily roll between your fingers, the syrup is ready. If it dissolves, continue cooking until it reaches the soft ball stage.
Combine Ingredients
- Remove the jaggery syrup from the heat. Stir in the cardamom powder and then add the puffed rice. Mix thoroughly until all the puffed rice is evenly coated with the jaggery syrup.
Shape the Pori Urundai
- Lightly grease your hands with ghee. Take a small amount of the puffed rice mixture and roll it into a tight ball. Repeat until all the mixture is used.
Cool and Store
- Allow the Pori Urundai to cool completely. Once cooled, store them in an airtight container at room temperature. They will stay fresh and crisp for 3-4 days.
Recipe Notes
Expert Tips for Perfect Pori Urundai
- Quality Ingredients Matter: Use good quality jaggery for the best flavor and color. Darker jaggery will result in a richer, darker-colored sweet.
- Adjust Sweetness: If you prefer a less sweet treat, reduce the amount of jaggery slightly. Taste the syrup before adding the puffed rice and adjust accordingly.
- Don't Overcook the Jaggery: Overcooking can lead to a hard, brittle consistency. The soft ball stage is crucial for easy rolling.
- Clean Puffed Rice: Before using, it's recommended to gently clean the puffed rice to remove any dust or debris.
