Ingredients
 

For the Rice Mixture

  • 2 cup Rice cooked, leftover; day-old rice works best
  • 1/2 cup Parmesan Cheese grated
  • 1/4 cup Mozzarella Cheese grated, or another melting cheese
  • 1 tbsp Coriander or parsley
  • 1 tsp Pepper black, freshly ground, if possible
  • 2 Chilies finely chopped; adjust to taste, green
  • 1 tsp Salt or to taste
  • 1 cup Peas boiled until tender, frozen

For Coating

  • 2 tbsp Corn Flour
  • 1 cup Breadcrumb panko breadcrumbs recommended for extra crispiness
  • 1 large Egg but helps with adhesion, lightly beaten; optional

For Frying

  • 2 tbsp Olive Oil or vegetable oil; for frying

Instructions
 

Prepare the Rice Mixture

  • Combine cooked rice, parmesan cheese, mozzarella cheese, cilantro, black pepper, green chilies, and salt in a large bowl. Mix well to combine.
  • Add the boiled peas and gently mix. Cover and refrigerate for at least 30 minutes to allow the flavors to meld and the mixture to firm up.

Prepare the Coating

  • In a shallow dish, whisk together the cornstarch and a splash of water to form a smooth paste.
  • In another shallow dish, place the breadcrumbs.
  • If using, lightly beat the egg in a separate shallow dish.

Shape and Fry the Rice Balls

  • Dampen your hands with water to prevent sticking. Shape the rice mixture into 1-inch balls.
  • Roll each rice ball in the cornstarch paste, then dip in the beaten egg (if using), and finally coat thoroughly with breadcrumbs.

Fry the Rice Balls

  • Heat the olive oil in a large skillet over medium heat.
  • Carefully place the rice balls in the hot oil, ensuring not to overcrowd the pan. Fry in batches if necessary.
  • Fry for about 3-4 minutes per side, turning occasionally, until golden brown and crispy.
  • Remove the rice balls from the skillet and place them on a wire rack or paper towel-lined plate to drain excess oil.
