Ingredients
- 1 cup All-Purpose Flour maida, or maida maida
- 3 cup Water
- 1 tbsp Oil
- 1 tsp Salt or as per taste
- 1/2 cup Coconut grated
- 1 cup Sugar
- 1.5 strands Saffron Strands
- 1 pinch Food Color orange and green, red
Instructions
Prepare the Dough
- Combine all-purpose flour, salt, and oil in a bowl. Gradually add water, kneading until a soft, pliable dough forms. Knead for 5 minutes, then let it rest for 15 minutes.
Make the Sugar Syrup
- In a saucepan, combine sugar and water over medium heat. Stir occasionally until the sugar dissolves and the syrup thickens to a consistency that coats the back of a spoon. Stir in saffron strands and cardamom powder (if using).
Fry the Jeera Poli
- Divide the dough into small balls. Roll each ball into a thin circle. Heat oil in a pan and fry the poli until golden brown on both sides. Drain on paper towels.
Prepare the Coconut Topping
- Heat ghee in a pan. Add grated coconut and cook until lightly golden brown. Remove from heat and stir in food coloring. Drizzle with a teaspoon of sugar syrup and let it sit for 15 minutes.
Assemble and Serve
- Dip the fried poli in the sugar syrup, coating them evenly. Arrange on a serving plate and sprinkle the colored coconut over the poli. Drizzle extra sugar syrup, if desired. Serve warm or at room temperature.
Recipe Notes
Expert Tips for Perfect Jeera Poli
- For a richer flavor, use ghee instead of vegetable oil in both the dough and coconut topping.
- Don't overcrowd the pan when frying the poli; this ensures even browning and prevents sticking.
- If using fresh coconut, ensure it's thoroughly grated and dried slightly before toasting to prevent excessive oil release.
- Adjust the amount of sugar syrup according to your preference. Some people prefer a more intense sweetness.
