Ingredients
Sweet Potatoes
- 4 medium Potatoes sweet
Flavor & Spices
- 1/4 tsp Cardamom Powder
- 1/8 tsp Saffron Strands
Fat & Garnish
- 2 tbsp Ghee
- 2 tbsp Nuts mixed, roasted and chopped
- 2 tbsp Melon Seeds chopped, roasted
Instructions
- Wash and pressure cook the sweet potatoes for 3-4 whistles until tender. Allow the pressure to release naturally.
- Once the sweet potatoes are cool enough to handle, peel and mash them thoroughly. Set aside.
- In a non-stick pan, heat the desi ghee over medium heat. Add the mashed sweet potatoes and sauté for 2-3 minutes until slightly fragrant.
- In a separate saucepan, combine the water, sugar, and cardamom powder. Bring to a simmer over medium heat, stirring until the sugar dissolves. This creates a flavorful syrup that will sweeten and enhance the halwa.
- Pour the sugar syrup over the sautéed sweet potatoes. Cook, stirring continuously, until the mixture thickens and the liquid is absorbed. This step is crucial for achieving the desired halwa texture.
- Stir in the saffron strands, roasted mixed nuts, and chopped roasted melon seeds. The saffron adds a beautiful golden hue and a delicate floral aroma.
Recipe Notes
Good To Know
- For added depth and a subtle caramel flavor, roast the sweet potatoes in the oven until the skins are blistered before mashing them into the halwa.
- If observing a vrat (fast) and avoiding regular sugar, substitute with rock sugar (mishri) or jaggery, adjusting the quantity to taste and melting it in water before adding.
- Garnish the halwa with a mix of toasted nuts like almonds, cashews, and pistachios for extra crunch, or sprinkle edible silver leaf (varq) for a festive presentation.
Expert Tips
- Don't overcook the halwa, as it can become dry. Cook until it thickens and starts to pull away from the sides of the pan.
- Adjust the amount of sweetener to your preference. Start with a smaller amount and add more if needed.
- The quality of ghee greatly impacts the flavor of the halwa. Use a good quality, aromatic ghee for the best results.
Storage Instructions
- Sharkund Halwa can be stored in the refrigerator for up to 3 days. Gently warm it in a pan with a teaspoon of ghee before serving to restore its rich aroma and texture.
