Ingredients
For the Filling
For the Dough
- 1 cup Whole Wheat Flour whole
- 1/2 cup Milk whole milk is recommended
- 1 tbsp Ghee
- 1/4 tsp Salt
Instructions
Prepare the Fig Filling
- Soak the dried figs in warm water for 30 minutes to soften. Drain well and blend into a smooth paste using a food processor or blender.
Cook the Filling
- Heat 3 tablespoons of ghee in a pan over medium heat. Add the almond powder and sauté for 1 minute until fragrant. Add the fig paste and cook for 3 minutes, stirring frequently, until slightly thickened.
- Stir in the sugar and cook for another minute until the sugar dissolves. Remove from heat and let cool completely to room temperature.
Make the Dough
- In a large bowl, combine the whole wheat flour, salt, and 1 tablespoon of ghee. Mix well using your fingertips to incorporate the ghee into the flour. Gradually add milk, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic. Cover and let the dough rest for at least 15 minutes.
Assemble and Cook the Puran Poli
- Divide the dough into small, equal-sized balls. Roll each ball into a thin circle. Place a spoonful of the cooled almond and fig filling in the center. Bring the edges of the dough together to enclose the filling, and then gently roll it into a slightly flattened circle.
- Heat a lightly oiled griddle or flat pan over medium heat. Cook the puran poli for 2-3 minutes per side, or until golden brown and cooked through. Brush with ghee while cooking for added richness and flavor. Serve hot.
