Ingredients
Dry Ingredients
- 200 gm All-Purpose Flour can substitute with half all-purpose flour and half cake flour for a softer cookie
- 2 tsp Baking Powder
Wet Ingredients
- 100 gm Butter softened to room temperature, unsalted
- 100 gm Caster Sugar
- 1 Large Egg lightly beaten
- 1 tsp Vanilla Extract
Topping
- 4-6 tbsp Jam your choice of flavor, or apricot, raspberry, such as strawberry
Instructions
Preheat Oven and Prepare Baking Sheet
- Preheat your oven to 190°C (375°F) / 170°C fan / Gas Mark 5. Line a large baking sheet with parchment paper.
Combine Dry and Wet Ingredients
- In a large bowl, cream together the softened butter and caster sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
Gradually Add Flour and Baking Powder
- Gradually add the flour and baking powder to the wet ingredients, mixing until just combined. Be careful not to overmix.
Shape and Cut the Dough
- Lightly flour your hands and shape the dough into a log approximately 5cm (2 inches) in diameter. Cut the log into 2cm (¾ inch) thick slices.
Place on Baking Sheet and Make Indentations
- Place the cookie slices onto the prepared baking sheet, leaving some space between each one as they will spread during baking. Use the end of a wooden spoon or your thumb to gently make an indentation in the center of each cookie.
Fill with Jam and Bake
- Fill each indentation with about 1 teaspoon of jam. Bake for 10-15 minutes, or until the edges are lightly golden brown.
Cool and Serve
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
