Prepare the Nacho Dough

  • Combine maize flour, all-purpose flour, salt, Italian herbs, and 1 tablespoon of oil in a bowl. Gradually add water, mixing until a soft, pliable dough forms. Set aside for at least 15 minutes.

Make the Sauce

  • Blend the pressure-cooked and peeled tomatoes, onion, green chili, garlic, tomato paste, raw mango, salt and 1 tablespoon of water into a smooth puree.
  • Stir in the chopped coriander and spring onions. Adjust seasoning as needed.

Shape and Fry the Nachos

  • On a lightly floured surface, roll out small portions of the dough into thin circles. Use a knife to cut each circle into a spiral or wheel shape. Prick the nachos with a fork on both sides to prevent puffing.
  • Heat oil in a deep pan or wok over medium-high heat. Carefully fry the nachos until golden brown and crispy. Remove and drain on paper towels.

Serve

  • Arrange the crispy nachos on a serving platter. Serve immediately with the tomato sauce.
