Ingredients
For the Nachos
- 1 cup Maize Flour
- 1/2 cup All-Purpose Flour also known as refined flour
- 1 1/2 tsp Salt or to taste
- 1 tsp Italian Herbs dried, mixed
- 1 tbsp Vegetable Oil plus extra for frying
For the Sauce
- 2 Tomatoes pressure cooked and peeled
- 1 Onion chopped, medium-sized
- 1 Chili finely chopped, green
- 1.5 clove Garlic minced
- 1 tbsp Tomato Paste Or Ketchup
- 1/2 Mango peeled and chopped, raw
- 1.5 Spring Onions finely chopped
- 1.5 tbsp Coriander chopped, cilantro
- 1/2 tsp Salt for the sauce, or to taste
- 1 tbsp Water for adjusting sauce consistency
Instructions
Prepare the Nacho Dough
- Combine maize flour, all-purpose flour, salt, Italian herbs, and 1 tablespoon of oil in a bowl. Gradually add water, mixing until a soft, pliable dough forms. Set aside for at least 15 minutes.
Make the Sauce
- Blend the pressure-cooked and peeled tomatoes, onion, green chili, garlic, tomato paste, raw mango, salt and 1 tablespoon of water into a smooth puree.
- Stir in the chopped coriander and spring onions. Adjust seasoning as needed.
Shape and Fry the Nachos
- On a lightly floured surface, roll out small portions of the dough into thin circles. Use a knife to cut each circle into a spiral or wheel shape. Prick the nachos with a fork on both sides to prevent puffing.
- Heat oil in a deep pan or wok over medium-high heat. Carefully fry the nachos until golden brown and crispy. Remove and drain on paper towels.
Serve
- Arrange the crispy nachos on a serving platter. Serve immediately with the tomato sauce.
