  • 1/4 tsp Pepper white
  • 1 cup Béchamel Sauce 2 tbsp all-purpose flour, and 1 cup milk, made with 2 tbsp butter

Make the Tortilla Chips

  • Combine maize flour, all-purpose flour, oil, salt, and pepper in a bowl. Gradually add water, mixing until a soft dough forms.
  • Divide the dough into equal portions and roll into balls.
  • Dust the balls with flour and roll out into thin circles (about 6 inches in diameter).
  • Cut each circle into 6-8 triangles.
  • Heat oil in a large skillet or deep fryer to 350°F (175°C). Fry the tortilla chips in batches until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Prepare the Cheese Sauce

  • In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, creating a roux.
  • Gradually whisk in the milk until smooth. Bring to a simmer, stirring constantly until the sauce thickens.
  • Reduce heat to low and stir in the shredded cheese until melted and smooth. Season with salt and white pepper.

Make the Salsa

  • In a bowl, combine the chopped tomatoes, cucumber, onion, jalapeño, lime juice, salt, and pepper. Mix well.
