  • Add the remaining water and half a cup of flour to the yeast mixture. Stir until well combined.
  • Gradually add the rest of the flour, stirring until a sticky dough forms. Transfer the dough to an oiled bowl, cover, and let rise at cool room temperature for 6-24 hours, or until tripled in volume. Then, refrigerate until ready to use.
  • In a large bowl, combine the milk, water, and honey. Stir in the yeast and let sit for 10 minutes until frothy.
  • In a separate bowl, whisk together the flour, salt, grated cheddar cheese, and minced onions.
  • Break the biga into smaller pieces and add it to the yeast mixture. Stir until combined. Gradually add the dry ingredients to the wet ingredients, mixing until a shaggy dough forms.
  • Turn the dough out onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. Add a little more water if the dough feels too dry. The minced onions will also add moisture, so adjust the water accordingly.
  • Place the dough in an oiled bowl, cover, and let rise for 1 hour, or until doubled in size.
  • Punch down the dough to release the air. Divide it into two equal pieces. Roll each piece into an 8x10 inch rectangle. Tightly roll up each rectangle into a log, pinching the seams to seal.

  • Sprinkle flour over the loaves and score each loaf with three diagonal cuts using a sharp knife. Bake for 25 minutes, or until golden brown. If the tops brown too quickly, cover loosely with foil. Cool on a wire rack before slicing and serving.
