  • Gradually add water while kneading the dough. Add the remaining ghee and continue kneading until soft and pliable, neither too sticky nor too firm. This develops gluten for a chewy texture.
  • Cover the dough with a damp cloth and let it rest for 30 minutes. This allows the gluten to relax, making the dough easier to roll.
  • Heat 1 teaspoon of oil in a wok or large pan over medium heat. Add the fennel seeds and chopped cashews. Sauté for 1-2 minutes until lightly fragrant.
  • Add the chopped onions and grated ginger to the pan. Sauté until the onions soften and turn translucent, about 5-7 minutes.
  • Add the turmeric powder, salt, coriander powder, dry mango powder, fennel powder, sugar, and red chili powder. Mix well and cook for another minute until fragrant.
  • Stir in the raisins. Remove from heat and let the filling cool completely.
  • Divide the rested dough into small, equal-sized balls. Roll each ball into a thin circle, similar to a puri.
  • Place 1-2 teaspoons of the cooled onion filling in the center of each dough circle. Bring the edges of the dough together to form a small pouch or potli, sealing tightly.
  • Heat desi ghee or oil in a deep fryer or kadai over medium heat. Carefully drop the filled kachoris into the hot oil, a few at a time, ensuring not to overcrowd the pan.
  • Fry the kachoris until they turn golden brown and crispy, turning occasionally for even cooking. Remove with a slotted spoon and place on a plate lined with absorbent paper to drain excess oil.

Recipe Notes

Good To Know

  • For an extra crunchy kachori, let the shaped kachoris rest for 10-15 minutes before frying; this helps to dry out the surface slightly and enhances crispiness.
  • If you want to make the kachoris ahead of time, partially fry them until light golden, let them cool completely, and then do a second fry just before serving for maximum freshness.
  • For a tangier filling, add a teaspoon of amchur (dry mango powder) or a few drops of lemon juice to the onion masala; this balances the spice and brings out the flavors.
  • Serve the kachoris with a side of green chutney and sweet tamarind chutney, and garnish with a sprinkle of finely chopped coriander and a pinch of chaat masala for a festive street-food presentation.

Expert Tips

  • Use a good quality oil with a high smoke point for frying the kachoris to ensure they cook evenly and don't absorb too much oil.
  • Don't overcrowd the pan while frying; this will lower the oil temperature and result in soggy kachoris. Fry in batches for best results.
  • Experiment with different fillings! Try adding spiced potatoes, lentils, or even paneer to your kachori filling for a unique twist.

Storage Instructions

  • Store leftover kachoris in an airtight container at room temperature for up to 2 days. Reheat in a preheated oven or air fryer for a few minutes to restore crispness.
