Ingredients
Kulfi Base
- 4 cup Full-Fat Milk
- 1 cup Cottage Cheese grated and well-blended
- 1/2 tsp Saffron Strands crushed
- 6 tbsp Sugar or to taste
- 2 Cardamom Pods crushed, or seeds
Garnishes and Filling
- 2 tsp Almonds slivered
- 1/4 cup Pistachios finely sliced
- 1/4 cup Gulkand rose jam
- Rose Syrup as needed
- Glazed Cherries as needed
Instructions
- In a large pot, boil the milk over medium heat. Reduce the milk to half its original volume. This concentrates the milk's flavor and creates a richer kulfi.
- Add the crushed saffron strands to the boiling milk. Stir well.
- Add the sugar and continue boiling for 5 minutes. This helps dissolve the sugar completely.
- Remove the pot from the heat. Stir in the crushed cardamom and sliced nuts.
- Allow the mixture to cool to room temperature. Once cooled, gently fold in the blended paneer until well combined.
- Fill ring-shaped kulfi molds with the paneer kulfi mixture. Cover the molds and freeze until the kulfi is set, preferably for at least 6-8 hours.
- To serve, garnish the paneer kulfi with slivered almonds, pistachios, a dollop of gulkand, and glazed cherries.
- Drizzle rose syrup over the kulfi to create a vibrant pichkari color effect.
