Ingredients
For the Pickle
- 8-10 Chilies green
- 1 medium Onion
- 1 cup Vinegar white
- 1 tsp Fennel Seeds saunf
- 1/2 tsp Nigella Seeds kalonji
- 1/4 tsp Fenugreek Seeds methi dana
- 1 1/2 - 2 tsp Salt or to taste
Optional additions
- 1/2 tsp Mustard Seeds for extra flavor
- 1/4 tsp Turmeric Powder for color and flavor
Instructions
Preparation
- Wash the green chilies and cut them into halves or thirds, depending on size. Peel and thinly slice the onion.
Drying
- Spread the chilies and onions on a clean surface or wire rack and let them air dry for at least 1 hour, or until any excess moisture is gone. A fan can help speed up the process.
Spice Tempering
- Dry roast the fennel seeds, nigella seeds, and fenugreek seeds in a small pan over medium heat until fragrant. Let them cool slightly, then coarsely crush them using a mortar and pestle or a spice grinder.
Pickling
- In a clean, dry glass jar, combine the dried green chilies, sliced onions, crushed spices, and salt. Add the vinegar. Stir well with a clean, dry spoon to ensure all ingredients are coated. Seal the jar tightly.
Fermentation
- Keep the jar in a cool, dry place in your kitchen for 7 days. Gently stir the pickle 2-3 times a day using a clean, dry spoon. This helps distribute the flavors and prevents mold growth.
Enjoy!
- After 7 days, your Hari Mirch Aur Pyaz Ka Achar is ready! Enjoy it with parathas, dal chawal, sandwiches, salads, or any dish you like. Store in the refrigerator for longer shelf life.
Recipe Notes
Expert Tips for the Best Hari Mirch Aur Pyaz Ka Achar
- Sterilize your jar: Before adding the pickle, sterilize the jar by washing it thoroughly with hot, soapy water and then rinsing it with boiling water. This helps prevent spoilage.
- Adjust the spice level: If you prefer a milder pickle, reduce the number of green chilies. For a spicier version, add more. You can also adjust the amount of salt according to your taste.
- Use high-quality vinegar: Using a good quality white vinegar will enhance the flavor of your pickle. Apple cider vinegar can also be used for a slightly different flavor profile.
- Patience is key: Allow the pickle to ferment for the full 7 days to develop the best flavor. Don’t rush the process!
