Ingredients
For the Dough
- 1 cup Multigrain Flour
- 1 pinch Salt
- 1 tbsp Oil
- ½ tsp Baking Soda
- ½ tsp Baking Powder
- Water as needed for kneading
For the Filling
- 1 Onion finely chopped, medium
- 1 Bell Peppers finely chopped, red
- 1 Bell Peppers finely chopped, yellow
- 1 Bell Peppers finely chopped, green
- 1 Zucchini finely chopped
- 1 Potato boiled and mashed
- ½ cup Cottage Cheese cubed
- 1 tbsp Ginger-Chili Paste
- ½ tsp Cumin Seeds
- ½ tsp Chaat Masala
- ½ tsp Chili Powder
- Salt to taste
- 2 tbsp Oil for cooking filling
For the Pizza Sauce
- 4 Tomatoes and pureed, blanched, large, peeled
- 1 tbsp Garlic Paste
- ½ Bell Peppers finely chopped, green
- 1 tbsp Tomato Ketchup
- 1 tbsp Tomato Paste
- Salt to taste
- 1 tsp Sugar or honey
- 1 tbsp Chili Powder red
- 1 tsp Pepper black
- 1 tbsp Virgin Olive Oil extra
- 1 tsp Oregano dried
- ½ tsp Thyme dried
- 1 tbsp Parsley finely chopped, fresh
For Assembling the Paratha
- 1 cup Mozzarella Cheese shredded
- 6 tbsp Pizza Sauce
- Chili Flakes to taste
- Oregano dried, to taste
Instructions
- In a large bowl, combine the multigrain flour, salt, oil, baking soda, and baking powder. Mix well.
- Gradually add water and knead until a soft, pliable dough forms. This develops the gluten, resulting in a softer paratha.
- Cover the dough and let it rest for at least 30 minutes. This allows the gluten to relax, making the dough easier to roll.
- Heat oil in a pan. Add ginger-chili paste and sauté for a minute until fragrant.
- Add the chopped onions and bell peppers. Sauté until slightly softened.
- Add the chopped zucchini, mashed potato, and cubed paneer. Mix well.
- Stir in the cumin seeds, chaat masala, chili powder, and salt. Cook for another 2-3 minutes until the paneer is heated through.
- Remove from heat and let the filling cool.
- To prepare the pizza sauce, heat olive oil in a saucepan. Add garlic paste and sauté until fragrant.
- Add the tomato puree, tomato ketchup, tomato paste, salt, sugar, red chili powder, and black pepper. Mix well.
- Add dried oregano, thyme, and chopped parsley. Stir to combine.
- Simmer for 20 minutes, or until the sauce thickens to a desired consistency. Stir occasionally to prevent sticking.
- Roll out a portion of the dough into a thin circle. Spread a layer of pizza sauce over the paratha.
- Add the prepared filling evenly over the sauce. Sprinkle with mozzarella cheese, chili flakes, and dried oregano.
- Carefully fold the paratha in half, sealing the edges to prevent the filling from spilling out.
- Heat a griddle or tawa. Cook the paratha on both sides until golden brown and crispy, using a little oil or butter.
- Cut the paratha into wedges and serve hot.
