  • In a large bowl, combine the multigrain flour, salt, oil, baking soda, and baking powder. Mix well.

  • Gradually add water and knead until a soft, pliable dough forms. This develops the gluten, resulting in a softer paratha.
  • Cover the dough and let it rest for at least 30 minutes. This allows the gluten to relax, making the dough easier to roll.
  • Heat oil in a pan. Add ginger-chili paste and sauté for a minute until fragrant.
  • Add the chopped onions and bell peppers. Sauté until slightly softened.

  • Simmer for 20 minutes, or until the sauce thickens to a desired consistency. Stir occasionally to prevent sticking.
  • Roll out a portion of the dough into a thin circle. Spread a layer of pizza sauce over the paratha.

  • Add the prepared filling evenly over the sauce. Sprinkle with mozzarella cheese, chili flakes, and dried oregano.

  • Heat a griddle or tawa. Cook the paratha on both sides until golden brown and crispy, using a little oil or butter.
