Prepare the Ingredients

  • Roughly chop the tomatoes and set aside. Dry roast the fenugreek and mustard seeds in a pan until fragrant. Transfer to a spice grinder and grind into a coarse powder.

Sauté the Spices

  • Heat oil in a pan. Add mustard seeds and allow them to splutter. Add asafoetida and 1 teaspoon of the ground fenugreek and mustard seed powder. Stir well.

Cook the Tomatoes

  • Add the chopped tomatoes, salt, and turmeric powder to the pan. Mix well and cook for about 5 minutes, stirring occasionally, until the tomatoes soften.

Finish and Serve

  • Add red chili powder and cook for another 2-3 minutes, until the tomatoes are juicy and the flavors have melded. Remove from heat. Serve hot or at room temperature. Store in an airtight container in the refrigerator for up to 3 days and reheat as needed.
