Ingredients
Gooseberries & Soaking
- 2 cup Gooseberry amla, dry indian gooseberries
- 2 cup Water for soaking gooseberries
Spice Blend
- 1/2 tsp Cumin
- 1 tsp Urad Dal black gram, urad dal
- 1/2 tsp Coriander
- 1 tsp Chana Dal bengal gram, chana dal
- 1/2 tsp Mustard Seed rai
- 3/4 tsp Fenugreek methi dana
- 1 pinch Asafoetida hing
- 3 Chili green
Instructions
Soak the Gooseberries
- Soak the gooseberries in 2 cups of water for at least 8 hours, or preferably overnight. This softens them for easier grinding.
Grind the Gooseberries
- Drain the water from the soaked gooseberries. Grind them into a smooth paste with the salt using a blender or food processor. Transfer to a clean jar for storage.
Prepare the Spice Blend
- Heat the oil in a pan over medium heat. Add the cumin seeds, black gram, coriander seeds, Bengal gram, mustard seeds, and fenugreek seeds. Sauté until the spices turn light brown and fragrant, stirring frequently to prevent burning.
Combine and Grind
- Remove from heat and let the spice mixture cool slightly. Grind the mixture into a fine powder using a spice grinder or mortar and pestle. Add a small portion of the prepared gooseberry paste to the spice powder and blend again until well combined. Repeat until all the gooseberry paste is incorporated.
Store and Serve
- Transfer the Usirikaya Pachadi to a clean, airtight jar. Store in a cool, dry place. This pickle can be stored for up to a month. Serve with hot steamed rice and a dollop of warm ghee (clarified butter).
