Prepare the Jalebi Batter

  • In a large bowl, whisk together the all-purpose flour, gram flour, yogurt, and water until smooth. Add the Eno fruit salt and gently mix; do not overmix.

Fry the Jalebis

  • Heat the oil or ghee in a large, deep pan over medium heat. Using a jalebi maker or a piping bag with a star tip, carefully pipe the batter into the hot oil, forming swirling circles. Fry until golden brown on both sides, flipping gently halfway through.

Make the Sugar Syrup

  • In a saucepan, combine the sugar and water. Bring to a boil, stirring until the sugar dissolves completely. Reduce heat to a simmer. Add the saffron strands, orange food coloring, and cardamom powder. Simmer for 2-3 minutes until it reaches a one-thread consistency.

Soak and Garnish

  • Carefully remove the fried jalebis and immediately immerse them in the warm sugar syrup for about 30 seconds per side, ensuring they absorb the syrup evenly. Remove from the syrup and let excess drip off.

Serve

  • Garnish with rabri or mawa, sliced pistachios, almonds, and silver vark (optional). Serve warm and enjoy!
