Ingredients
For the Pasta
For the Jalebi Batter
- 1 cup All-Purpose Flour also known as refined flour or maida
- 1/2 tsp Active Yeast dry
- 1/2 tsp Sugar
- 1/4 tsp Salt
- 1/4 tsp Cardamom Powder ground cardamom; also known as elaichi
- 1/2 cup Water lukewarm, for activating yeast
- Water as needed, for adjusting batter consistency
For Frying & Syrup
- 2 cup Vegetable Oil for deep frying
- 1 cup Sugar granulated sugar
- 1 cup Water for sugar syrup
- 5 Saffron Strands
For Garnish (Optional)
- 1/4 cup Almonds sliced
- 1/4 cup Pistachios chopped
Instructions
Prepare the Pasta
- Boil 8 ounces of pasta according to package directions, adding 1 teaspoon of salt to the water. Drain well and set aside.
Activate the Yeast
- In a small bowl, combine 1/2 teaspoon of active dry yeast, 1/2 teaspoon of sugar, and 1/2 cup of lukewarm water. Mix gently and let stand for 5 minutes until foamy.
Make the Jalebi Batter
- In a large bowl, whisk together 1 cup of all-purpose flour, 1/4 teaspoon of salt, and the activated yeast mixture. Gradually add more water, a tablespoon at a time, until you achieve a thick, smooth batter. Let the batter rest for 30 minutes in a warm place.
Prepare the Saffron Syrup
- In a small saucepan, combine 1 cup of sugar, 1 cup of water, and 5 saffron strands. Bring to a simmer over medium heat, stirring until the sugar dissolves. Reduce heat to low and simmer for 10 minutes, or until the syrup thickens slightly. Remove from heat and set aside.
Add Cardamom to Batter
- Stir in 1/4 teaspoon of cardamom powder into the rested batter, mixing well to combine.
Fry the Pasta Jalebi
- Heat about 2 cups of vegetable oil in a deep pot or kadai over medium-high heat. Dip each cooked pasta piece into the batter, ensuring it's fully coated. Soak & Serve
