  • Mix milk powder, clarified butter (ghee), and milk in a bowl. Microwave for 3 minutes, stirring every 30 seconds until a thick mawa forms.

Cook the Coconut Filling

  • In a pan, combine shredded coconut and sugar. Cook for a few minutes until softened. Add the prepared khoya and cardamom powder. Cook for 10 minutes, stirring constantly, until a thick mixture forms.

Prepare the Dough

  • Combine flour, salt, and oil in a bowl. Gradually add water, mixing until a firm, smooth dough forms. Rest the dough for 15-20 minutes.

Assemble the Gujiyas

  • Roll the dough into small circles. Place a spoonful of the khoya filling in the center of each circle. Fold the dough over to form a half-moon shape, sealing the edges tightly with a little water.

Fry the Gujiyas

  • Heat vegetable oil in a deep pan. Deep-fry the gujiyas over medium-low heat until golden brown and crispy. Remove and drain on paper towels.

Make the Sugar Syrup

  • In a saucepan, combine sugar and water. Bring to a boil, then simmer for 5-7 minutes, or until a two-string consistency is reached. Allow the syrup to cool slightly.
