Ingredients
For the Jalebi Batter
- 1 cup All-Purpose Flour also known as maida
- 1.5 tsp Gram Flour also known as besan
- 1 cup Yogurt
- 1/2 tsp Baking Powder
- 1/2 tsp Cardamom for enhanced flavor, optional, powder
- 1/4 tsp Saffron for color and flavor, optional, threads
- Water Water as needed for desired batter consistency
For the Sugar Syrup
- 1.5 cup Sugar granulated
- 1 cup Water
- 1/4 tsp Lemon Juice helps prevent crystallization
- 1/4 tsp Saffron for color and flavor, optional, threads
For Frying
- Vegetable Oil as needed, for deep frying
- 1 packet Baking Powder eno
Instructions
Prepare the Jalebi Batter
- In a large bowl, whisk together the all-purpose flour, gram flour, yogurt, baking powder, and optional cardamom powder and saffron. Gradually add water, mixing until you achieve a smooth, slightly thick batter. The consistency should resemble pancake batter.
Make the Sugar Syrup
- In a saucepan, combine sugar, water, and lemon juice. Bring to a boil over medium heat, stirring until the sugar dissolves completely. Continue to boil until the syrup reaches a one-thread consistency (a thin strand forms when you lift a spoon and let the syrup drip back into the pan).
- Stir in the saffron threads (if using) and remove from the heat. Allow the syrup to cool slightly.
Fry the Jalebi
- Just before frying, gently fold in half a packet of baking powder (eno) into the jalebi batter. Heat vegetable oil in a deep fryer or a wide, heavy-bottomed pan to 350°F (175°C).
- Using a jalebi maker or a ziplock bag with a small corner snipped off, carefully pipe the batter into the hot oil to form spiral shapes.
- Fry the jalebi until they are golden brown and crispy. This usually takes about 2-3 minutes per batch. Remove with a slotted spoon and drain on a wire rack.
Soak and Serve
- Immediately after frying, gently place the jalebi in the warm sugar syrup for about 1 minute. This helps them absorb the syrup and become even sweeter.
- Remove the jalebi from the sugar syrup and gently place them on a wire rack or plate to drain any excess syrup. Serve warm and enjoy!
