Ingredients
Dry Ingredients
- 1 cup Broken Wheat
- 1/4 cup Semolina (optional), rava
Wet Ingredients
- 1 cup Yogurt
Leavening and Seasoning
- 1/2 tsp Eno Fruit Salt
- Salt to taste
Instructions
- Dry roast the broken wheat and semolina in a pan over medium heat for 3-4 minutes until fragrant. This enhances their nutty flavor. Transfer to a mixing bowl.
- In the same pan, lightly sauté cashews until golden brown. Set aside. Briefly sauté mustard seeds, urad dal, and chana dal until fragrant. Add the grated carrot and stir-fry for 2-3 minutes until slightly softened. Combine this mixture with the roasted broken wheat and semolina.
- Add yogurt, chopped coriander, and salt to the dry ingredients. Mix well, adding a little water to achieve a medium-thick batter consistency. Let the batter rest for 10 minutes to allow the broken wheat to absorb the moisture. This helps create a light and fluffy texture.
- Just before steaming, gently fold in the Eno fruit salt. This creates air bubbles, resulting in soft idlis. Grease idli molds and pour in the batter. Steam for 20 minutes until a toothpick inserted comes out clean.

- Once the eno salt is added, steam cook immediately.
- You can also use baking soda instead of eno salt.
- These ingredients give fluffiness to the idlis.
- Broken wheat idlis take longer to cook than regular idlis.

- For extra soft idlis, soak the lentils and rice separately for at least 4-6 hours, or even overnight.
- Grind the batter to a smooth, airy consistency. A slightly coarse batter can result in denser idlis.
- Don't overfill the idli molds. Fill them about ¾ full to allow for expansion during steaming.

- Leftover idlis can be stored in an airtight container in the refrigerator for up to 3 days.
