  • Bring the milk to a simmer in a saucepan over medium heat. Add the ground rice and coconut sugar.

Cook and Stir

  • Continuously stir the mixture to prevent lumps from forming. Cook until the mixture thickens considerably, coating the back of a spoon. This will take approximately 10-15 minutes. Remove from heat.

Incorporate Chia Seeds and Agar Agar

  • Stir in half of the chia seeds. In a small bowl, whisk the agar agar powder with 2 tablespoons of cold milk until smooth. Pour this mixture into the phirni base and stir well to combine.

Setting the Panna Cotta

  • If using rose water, add it now. Pour the mixture into individual serving glasses or a single mold (cylindrical mold recommended). Refrigerate for at least 2 hours, or until completely set.

Garnish and Serve

  • Garnish each serving with the remaining chia seeds, chopped pistachios, and a sprinkle of rose petals. Serve chilled and enjoy!
