Ingredients
For the Phirni Base
- 500 ml Milk
- 30 gm Rice basmati rice, soaked for at least 30 minutes, then finely ground
- 30 gm Coconut Sugar
- 2 gm Agar Agar
For the Chia Seed Infusion & Garnish
- 20 gm Chia Seeds also known as sabja seeds
- 10 gm Pistachios finely chopped
- 1 tbsp Rose Water for added fragrance, optional
- Pinch Rose Petals for garnish
Instructions
Prepare the Phirni Base
- Bring the milk to a simmer in a saucepan over medium heat. Add the ground rice and coconut sugar.
Cook and Stir
- Continuously stir the mixture to prevent lumps from forming. Cook until the mixture thickens considerably, coating the back of a spoon. This will take approximately 10-15 minutes. Remove from heat.
Incorporate Chia Seeds and Agar Agar
- Stir in half of the chia seeds. In a small bowl, whisk the agar agar powder with 2 tablespoons of cold milk until smooth. Pour this mixture into the phirni base and stir well to combine.
Setting the Panna Cotta
- If using rose water, add it now. Pour the mixture into individual serving glasses or a single mold (cylindrical mold recommended). Refrigerate for at least 2 hours, or until completely set.
Garnish and Serve
- Garnish each serving with the remaining chia seeds, chopped pistachios, and a sprinkle of rose petals. Serve chilled and enjoy!
