Ingredients
- 2 cup All-Purpose Flour or chapati for chapati
- 1/4 tsp Salt or as per taste
- Milk as required
- 6 Stuffing or egg ingredients for egg
- 1.5 tsp Salt or as per taste
- 1 tsp Pepper black
- 1 tbsp Chilli finely chopped, green
- 1 tbsp Coriander dhania, finely chopped
- 2 tbsp Carrot grated
- 2 tbsp Onion finely chopped
- 1 tbsp Lemon Juice
- 1 tbsp Milk
- Oil
Instructions
Prepare the Egg Filling
- Whisk eggs and milk together in a bowl. Add salt, pepper, green chili, coriander, grated carrot, and chopped onion. Sauté the onions and carrots in 1 tbsp of oil until softened. Add this to the egg mixture. Stir in lemon juice.
Prepare the Wraps
- Combine refined flour and salt in a bowl. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth. Rest the dough for at least 15 minutes.
- Roll out small portions of the dough into thin circles (like a roti). Cook on a hot, lightly oiled griddle until small bubbles appear and slightly browned. Set aside.
Assemble and Cook the Egg Rolls
- Spread a thin layer of the egg mixture onto each cooked wrap. Gently roll them up tightly.
- Heat remaining oil in a pan over medium heat. Fry the egg rolls until golden brown and crispy, turning occasionally.
Serve
- Serve hot with green chutney or tomato sauce.
Recipe Notes
Expert Tips for Perfect Egg Rolls
- For extra flavor, add a pinch of garam masala or turmeric to the egg filling.
- If the egg mixture is too runny, add a tablespoon of bread crumbs to thicken it.
- Don't overcrowd the pan when frying the rolls; fry in batches to ensure even browning and crispiness.
- For a vegetarian option, replace the eggs with a mixture of mashed potatoes, paneer (Indian cheese), and spices.
