Prepare the Peanuts

  • Dry roast the peanuts in a heavy-bottomed pan or kadai over medium heat for 5-7 minutes, or until fragrant and crisp. Let them cool completely. Rub the peanuts together to remove the skins. Roughly chop the peanuts in half.

Melt the Jaggery

  • In the same pan, melt the jaggery over medium heat, stirring constantly to prevent burning. This will take about 5-7 minutes.

Test the Jaggery

  • To check if the jaggery is cooked to the right consistency, drop a small amount into a glass of cold water. If it forms a brittle, hard ball that breaks easily, it's ready. If it is still sticky or stretches, cook for a few more seconds.

Combine and Spread

  • Remove the pan from the heat. Immediately stir in the ghee, peanuts, and fennel seeds (if using). Pour the mixture onto the greased baking sheet or plate.

Shape and Cool

  • Spread the mixture evenly into a thin layer. Sprinkle with shredded coconut (if using). Use a knife or spatula to create score marks for easy breaking.

Set and Serve

  • Allow the chikki to cool completely before breaking it into pieces. Store in an airtight container at room temperature.
