Ingredients
 

Mangoes

  • 2 Mango for steaming, ripe
  • 1 Mango for additional flavor and texture, raw

Sweetener & Liquid

  • 1 cup Sugar adjust to taste, granulated sugar
  • 1 cup Water for steaming mangoes
  • 2 cup Water chilled, for diluting concentrate

Instructions
 

Prepare the Mangoes

  • Cut the ripe and raw mangoes into small pieces.
  • Place the mango pieces in a pressure cooker. Add 1 cup of water.
  • Steam the mangoes until tender (approximately 5-7 minutes).
  • Let the mangoes cool completely.

Make the Sugar Syrup

  • In a small saucepan, combine 1 cup of water and 1 cup of sugar.
  • Heat over medium heat, stirring constantly, until the sugar dissolves completely.
  • Set aside to cool.

Blend and Strain (Optional)

  • Once the mangoes are cool, blend them into a smooth puree using a hand blender or food processor.
  • For a smoother consistency, you can strain the puree through a fine-mesh sieve to remove the fibers (optional).

Combine and Chill

  • Stir the cooled sugar syrup into the mango puree. This is your mango concentrate.
  • To serve, add 2 cups of chilled water to the concentrate. Stir well.
  • Serve immediately over ice.
