Ingredients
Dough
- 1 cup All-Purpose Flour
- 2 tsp Active Yeast dry
- ½ cup Milk warm
- 1 tsp Sugar
- 1 ½ tsp Salt
- 2 tbsp Olive Oil plus more for greasing
Filling
- 1 cup Chicken boneless, cooked, shredded
- ¼ cup Mayonnaise
- ½ cup Mozzarella Cheese shredded
- ½ cup Cheese processed, shredded
- 1 tsp Oregano dried
- ½ tsp Pepper Flakes red
Topping
- 2 tbsp Butter melted
Instructions
- In a small bowl, combine the warm milk, sugar, and yeast. Let stand for 10 minutes until foamy. This activates the yeast, which will make the dough rise beautifully.
- In a large bowl, combine the flour and salt. Add the yeast mixture and 2 tablespoons of olive oil. Knead until a soft, smooth dough forms.
- Lightly grease a bowl with olive oil. Place the dough in the bowl, turning to coat. Cover and let rise in a warm place for 45 minutes, or until doubled in size.
- Punch down the dough to release the air. Divide the dough into 4 equal pieces.
- On a lightly floured surface, roll each piece into a thin circle. Spread a thin layer of mayonnaise over each circle.
- In a bowl, combine the shredded chicken, mozzarella cheese, processed cheese, oregano, and red pepper flakes.
- Place a portion of the chicken mixture in the center of each dough circle. Fold the edges of the dough over the filling to create a triangle shape, leaving one side open.
- Bring the three corners of the triangle together to form a parcel, pinching the edges to seal. Place the parcels on a baking sheet lined with parchment paper.
- Brush the parcels with melted butter and sprinkle with additional oregano. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until golden brown.
Recipe Notes
Good To Know
- For an extra gooey and indulgent filling, mix in a blend of mozzarella and processed cheese with the chicken—this will give you that signature Domino’s stretch when you pull the parcels apart.
- If you prefer a spicier kick, add a spoonful of peri-peri or sriracha sauce to the filling, or swap regular chilli flakes for smoked or chipotle ones for a deeper flavor profile.
- Brush the parcels with a mixture of melted butter, garlic, and a sprinkle of oregano right after baking for an aromatic, glossy finish reminiscent of Domino’s garlic bread.
- Parcels can be made ahead: assemble and freeze them unbaked on a tray, then transfer to a bag once frozen. Bake straight from frozen, adding 6-8 minutes to the baking time.
Expert Tips
- For a crispier base, pre-bake the dough for a few minutes before adding the filling.
- Don't overfill the parcels, as this can prevent them from sealing properly and cooking evenly.
- Get creative with the fillings! Try different combinations of cheeses, meats, and vegetables.
Storage Instructions
- Store leftover parcels in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven or microwave until warmed through.
