Ingredients
Cabbage Leaves
- 3 large Cabbage Leaves for parcels
- 1/2 cup Cabbage grated
Filling
- 1 cup Jackfruit cooked and shredded
- 1/2 cup Yogurt
- 3 tsp Couscous Paste
- 3 tsp Coconut Paste
- 3 Chillies finely chopped, green
- 1/2 tsp Turmeric Powder
- 1 1/2 tsp Salt or to taste
- 3 tsp Mustard Oil
Garnish and Serving
- 3 Scallions chopped, medium-sized, white and green parts separated
- 3 tsp Mustard Sauce for serving
- Rice cooked, for serving
Instructions
- Carefully select 3 large cabbage leaves to use as wrappers for the parcels. Blanch the cabbage leaves in boiling water for about 30 seconds to soften them. This makes them pliable and easy to fold. Immediately transfer the leaves to an ice bath to stop the cooking process and retain their vibrant green color.
- If using fresh jackfruit, boil it until tender, then drain and shred. Alternatively, use canned jackfruit. Heat the mustard oil in a pan over medium heat. Add the shredded jackfruit and sauté until lightly browned. This enhances its flavor and texture.
- In a bowl, combine the sautéed jackfruit, plain yogurt, grated cabbage, couscous paste, coconut paste, chopped green chilies, turmeric powder, and salt. Mix well to ensure all the ingredients are evenly distributed.
- Place a softened cabbage leaf on a flat surface. Add a portion of the jackfruit filling to the center of the leaf. Fold the sides of the cabbage leaf over the filling to create a parcel. Tie each parcel securely with the white parts of the scallions.
- Heat a little more mustard oil in a pan over medium heat. Gently place the cabbage parcels in the pan and shallow fry them until they are golden brown and heated through. Turning them occasionally ensures even cooking.
