Instructions

Prepare the Dough

  • Combine all-purpose flour, salt, baking soda, 2 tbsp oil, and pureed spinach in a bowl. Knead into a firm dough. Cover and refrigerate for at least 15 minutes.

Make the Filling

  • Heat 1 tbsp oil in a pan. Add diced potatoes, peas, sesame seeds, and all spices. Sauté until fragrant and peas are tender (about 5 minutes). Stir in chopped cilantro. Set aside to cool.

Assemble and Air Fry

  • Roll out small portions of the dough into thin circles or squares. Place a spoonful of filling in the center. Bring the four corners together to create a parcel. Repeat with remaining dough and filling.
  • Preheat your Philips Air Fryer to 200°C (400°F). Arrange the parcels in the air fryer basket in a single layer. Air fry for 10-12 minutes, or until golden brown and crispy. Let them sit in the air fryer for an additional 5 minutes.

Serve

  • Serve the hot potato and spinach parcels with your favorite chutney or dipping sauce.

Recipe Notes

Expert Tips for Perfect Parcels

  • For extra flavor, add a pinch of turmeric or cumin to the filling.
  • If your dough is too dry, add a teaspoon of water at a time until it becomes pliable.
  • Don't overcrowd the air fryer basket. Work in batches to ensure even cooking.
  • Experiment with different fillings! Try adding paneer (Indian cheese) or mushrooms for variation.
