Ingredients
 

Protein & Legumes

  • 200 gm Chicken Breast boneless, skinless; can substitute with 2 cups cooked shredded chicken
  • 1 cup Lentils also known as masoor dal, mysore paruppu, red

Grains & Oats

Aromatics & Spices

Garnish

  • 1/4 cup Coriander chopped, also known as dhania

  • 4 cup Water as needed for desired consistency, or more

Instructions
 

Prepare the Ingredients

  • Clean and chop the chicken breast into bite-sized pieces. Finely chop the onion and coriander leaves. Rinse the red lentils.

Cook the Lentils

  • In a pressure cooker, combine the red lentils with 2 cups of water. Pressure cook for 3 whistles or until the lentils are very soft and easily mashed.

Sauté Aromatics

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the cumin seeds and sauté for about 30 seconds until fragrant. Add the chopped onion and cook until softened and lightly browned.

Cook the Chicken

  • Add the chicken to the pot and season with salt and pepper. Cook until the chicken is pale and no longer pink.

Combine and Simmer

  • Stir in the rolled oats and 1 cup of water. Bring to a simmer, then add the cooked red lentils, ground cumin, and remaining 1 cup of water.

Thicken and Finish

  • Reduce heat to low, cover, and simmer for 10-15 minutes, or until the soup has thickened to your desired consistency, stirring occasionally. Stir in the chopped coriander leaves.

Serve

  • Serve hot, garnished with extra coriander if desired. Enjoy!
