Instructions
Prepare the Ingredients
- Clean and chop the chicken breast into bite-sized pieces. Finely chop the onion and coriander leaves. Rinse the red lentils.
Cook the Lentils
- In a pressure cooker, combine the red lentils with 2 cups of water. Pressure cook for 3 whistles or until the lentils are very soft and easily mashed.

Thicken and Finish
- Reduce heat to low, cover, and simmer for 10-15 minutes, or until the soup has thickened to your desired consistency, stirring occasionally. Stir in the chopped coriander leaves.

Expert Tips for the Best Oats & Chicken Soup:
- For a richer flavor, use bone-in chicken thighs instead of boneless breasts.
- Add other vegetables! Carrots, celery, and zucchini would all be delicious additions.
- Adjust the amount of water to achieve your preferred soup consistency – some prefer it thicker, others thinner.
- For a spicier soup, add a pinch of cayenne pepper or a few dashes of your favorite hot sauce.
