Ingredients
Red Sauce Pasta Ingredients
- 500 gm Wheat Penne Pasta ready-made, whole
- 250 gm Pasta Sauce jarred or homemade, red
- 1 tsp Ginger chopped
- 1/4 tsp Chili Powder or chili flakes, red, to taste
- 150 gm Tomato Puree
- 1 tbsp Tomato Paste
- 1 tsp Salt plus black pepper, to taste
- 1/2 cup Onions sliced
- 1/2 cup Bell Peppers sliced
- 1/2 cup Corn Kernels
- 2 tbsp Olive Oil
Spinach Pasta Ingredients
- 200 gm Wheat Pasta boiled, whole
- 200 gm Spinach fresh
- 1/4 cup Cheese processed
- 5-6 Garlic Cloves
- 1/4 cup Nuts almonds and cashews, mixed
- 2 tbsp Olive Oil
- Salt to taste
- 2 tsp Pasta Seasoning adjust to taste
- 1 cup Vegetables optional, mixed, roughly chopped
- Pepper to taste, black
Pumpkin Pasta Ingredients
- 250 gm Penne Pasta cooked
- 250 gm Pumpkin Puree canned or fresh
- 1 tsp Garlic crushed
- 1 Bell Peppers sliced
- 1/2 cup Milk
- 1 tbsp Heavy Cream
- 1/4 cup Cheese optional, grated
- Salt black pepper and red chili flakes, to taste
- 1 tsp Olive Oil
- 1 cup Onion chopped
Instructions
Prepare the Pasta
- Boil 500g whole wheat penne pasta according to package directions. Drain and rinse with cold water. Toss with a little olive oil to prevent sticking.
Red Sauce Pasta
- Heat 2 tbsp olive oil in a pan. Sauté 1 tsp chopped ginger and 1/4 tsp red chili powder until fragrant. Add 150g tomato puree, 1 tbsp tomato paste, 1 tsp salt, and black pepper. Simmer for 10 minutes until thickened. Meanwhile, sauté 1/2 cup each of sliced onions, bell peppers, and corn in a separate pan. Add the cooked pasta and vegetables to the sauce; cook for 2-3 minutes. Garnish with grated cheese and serve.
Spinach Pasta
- Blend 200g spinach, 1/4 cup processed cheese, 5-6 garlic cloves, 1/4 cup mixed nuts, 2 tbsp olive oil, salt, pepper, and 2 tsp pasta seasoning until smooth. In a pan, sauté mixed vegetables (optional). Add cooked pasta (200g) and spinach sauce. Toss and add pasta water for desired consistency. Add 1 tsp more pasta seasoning. Serve immediately.
Pumpkin Pasta
- Heat 1 tsp olive oil in a pan. Sauté 1 chopped onion and 1 tsp crushed garlic. Add 250g pumpkin puree, 1/2 cup milk, 1 tbsp heavy cream, and 1 sliced bell pepper. Simmer until heated through. Add 250g cooked penne pasta and optional grated cheese. Season with salt, pepper, and red chili flakes. Serve immediately.
