Ingredients
Main Ingredients
- 1 cup Pumpkin cubed (about 300g), red
- 1/2 Onion finely chopped
- 3 clove Garlic minced
- 1/2 inch Ginger peeled and minced
- 2 cup Vegetable Stock 500 ml
Garnishes
- 1 1/2 tsp Salt or to taste
- Pepper black, freshly ground
- 1 sprig Parsley chopped, fresh
- 1/2 tsp Vegan Cream or crème fraîche (optional)
- 1 tsp Pumpkin Seeds toasted
Instructions
- In a large pot or Dutch oven, sauté the chopped onion, minced garlic, and minced ginger over medium heat until softened and fragrant. This builds the flavor base of the soup.
- Add the cubed red pumpkin and vegetable stock to the pot. Ensure the pumpkin is fully submerged in the liquid.
- Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the pumpkin is tender. Alternatively, pressure cook for 4 whistles on high, then allow to cool completely.
- Carefully transfer the soup to a blender (or use an immersion blender) and purée until smooth and creamy.
- Return the puréed soup to the pot and season with salt to taste. Simmer for a few more minutes to allow the flavors to meld.
- Ladle the soup into bowls and garnish with freshly ground black pepper, chopped parsley, a dollop of vegan cream or crème fraîche (if using), and toasted pumpkin seeds.
Recipe Notes
Good To Know
- Use a vegetable stock cube dissolved in hot water for the stock.
- For added crunch, top with roasted pumpkin seeds or crispy chickpeas.
- For a richer soup, stir in coconut milk or cashew cream after blending.
- Enhance the spice with chili oil or smoked paprika.
Expert Tips
- Roasting the pumpkin before blending intensifies its flavor and creates a smoother texture.
- Adjust the amount of stock to achieve your desired consistency. For a thicker soup, use less stock; for a thinner soup, use more.
- Freshly grated ginger or a pinch of ground nutmeg can add warmth and complexity to the flavor profile.
Storage Instructions
- This soup freezes well. Allow it to cool completely before transferring to airtight containers.
- Reheat gently on the stove, adding a bit of stock if needed to restore its consistency.
