Ingredients
Protein & Grains
- 1 cup Chicken cooked chicken breast, shredded, shredded. you can use leftover roasted or boiled chicken.
- 1 cup Rolled Oats use quick-cooking or old-fashioned rolled oats.
Aromatics & Spices
- 1 Onion medium-sized, finely chopped
- 2 stalks Scallions also known as spring onions; thinly sliced, for garnish
- 1/2 tsp Cumin Seeds
- 1.5 tsp Salt adjust to taste
- 1/3 tsp Pepper ground black pepper, black
Liquids & Thickener
- 2 1/2 cup Chicken Stock use low-sodium chicken broth for better flavor control.
- 1 tbsp All-Purpose Flour used as a thickening agent. can substitute with cornstarch.
Fat
- 1 tbsp Vegetable Oil or any neutral-flavored cooking oil
Instructions
Sauté Aromatics and Chicken
- Heat the vegetable oil in a pot or large pan over medium heat. Once hot, add the cumin seeds and cook until they begin to sputter (about 30 seconds). Add the chopped onion and sauté for 1 minute, until softened.
- Add the shredded chicken and sauté for another minute, stirring occasionally.
- Season with salt and black pepper.
Make a Roux and Add Oats
- In a small bowl, whisk together the all-purpose flour with 1/4 cup of the chicken stock until smooth. Pour this mixture into the pan with the chicken and onions.
- Stir in the rolled oats and the remaining chicken stock. Bring the mixture to a gentle simmer.
Simmer and Serve
- Reduce the heat to low, cover the pot, and simmer for 3-5 minutes, or until the oats are cooked through and the soup has thickened slightly.
- Stir in the sliced scallions. Remove from heat and serve hot.
