  • Wash the basmati rice under cold water until the water runs clear. This removes excess starch and helps the rice cook evenly. Soak the rice for 30 minutes. Then, gently break the rice grains with your hands and drain completely.
  • In a saucepan, combine the jaggery, 2 cups of water, and a pinch of salt. Bring to a simmer over medium heat, stirring until the jaggery dissolves completely. Simmering allows the jaggery to melt gently and create a smooth syrup. Strain the syrup to remove any impurities.
  • In a pressure cooker, combine the washed and drained rice, the strained jaggery syrup, and 1/4 cup of water. Cook uncovered for 5-10 minutes. This allows the rice to absorb some of the jaggery syrup before pressure cooking. Close the cooker lid and cook over medium heat for 3 whistles. Avoid high heat, as this can scorch the rice.

  • Once the pressure releases naturally, transfer the cooked jaggery rice to a wide bowl or plate. Let it cool slightly for a few minutes to make it easier to handle. Gently fluff the rice with a fork. Fill heart-shaped molds with the rice, pressing down lightly to compact it. Invert the molds onto a serving platter to release the heart shapes.
  • Garnish the heart-shaped jaggery rice with grated coconut and dried cranberries for added flavor and visual appeal.
