Ingredients
 

Vegetables

  • 1 medium Potato mashed
  • 1 cup Carrot grated
  • 1 cup Cabbage finely shredded
  • 1 cup Peas boiled, frozen or fresh, green
  • 1/2 cup Coriander chopped, fresh

Prepare the Vegetables

  • Finely grate the carrots and cabbage. Boil the green peas until tender. Mash the potato well.

Sauté Aromatics

  • Heat vegetable oil in a pan over medium heat. Add cumin seeds and asafoetida (if using). Once the seeds crackle, add the grated carrots and cabbage. Sauté for 2-3 minutes until slightly softened.

Combine and Shape

  • Add the mashed potatoes and green peas to the pan. Mix well, season with salt and black pepper. Stir in the roasted coriander powder.

Fry the Patties

  • Shape the mixture into small patties, using a heart-shaped cookie cutter if desired. Shallow fry the patties in the remaining oil until golden brown and heated through.

Garnish and Serve

  • Arrange the patties on a plate. Garnish with a dollop of mayonnaise, grated chocolate, and fresh coriander. A rose adds a lovely Valentine's touch!

Recipe Notes

Expert Tips

  • For extra flavor, add a pinch of garam masala to the spice mix.
  • If you don't have a heart-shaped cutter, simply make small round patties.
  • To make the patties ahead of time, prepare them up to the frying stage and store them in the refrigerator. Fry them just before serving.
  • Feel free to experiment with other vegetables. Zucchini, bell peppers, or spinach would be delicious additions.
