Instructions

  • Finely chop the mixed dried fruits and nuts. In a glass jar, combine the chopped fruits and nuts with honey and fresh orange juice. Ensure the mixture is well-soaked. Cover and refrigerate.

  • Prepare the caramel sauce. In a non-stick pan over low-medium heat, melt the granulated sugar. Do not stir. Swirling the pan gently is okay. Once the sugar melts and turns a light amber color, carefully pour in the heavy cream while whisking constantly. The mixture will bubble up, so be cautious.
  • Whisk the caramel sauce until smooth. Return the pan to medium heat and stir in the salted butter. Cook for 2-3 minutes, stirring constantly, until the butter is fully incorporated. Remove from heat and let cool.

  • In a large bowl, combine the cooled caramel sauce, vegetable oil, and the soaked fruit and nut mixture.
  • In a separate bowl, whisk together the all-purpose flour, ground ginger, ground cinnamon, ground nutmeg, baking powder, and baking soda. This ensures the dry ingredients are evenly distributed for a consistent cake texture.
  • Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix, as this can lead to a tough cake.

  • Preheat oven to 180°C (350°F). Grease a baking tin. Pour the batter into the prepared tin and tap gently to release any air bubbles.
  • Bake for 30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the tin before slicing and serving.

Recipe Notes

Good To Know

  • For an extra boost of festive flavor, soak dried fruits (such as raisins, cranberries, or chopped dates) in freshly squeezed orange juice for several hours or overnight before adding them to the batter. This plumps them and infuses the cake with more citrusy aroma.
  • For a vegan version, replace the cream with coconut cream and swap the salted butter for vegan margarine. Substitute honey with maple syrup or agave nectar for similar sweetness and texture.
  • To ensure an even bake and prevent over-browning, line both the base and sides of your cake tin with parchment paper, allowing the paper to extend a couple of inches above the rim.

Expert Tips

  • Don't overmix the batter. Overmixing develops gluten, leading to a tougher cake. Mix until just combined.
  • Test for doneness by inserting a wooden skewer into the center of the cake. If it comes out clean, the cake is ready.
  • Let the cake cool completely in the tin before inverting it onto a wire rack to prevent it from breaking.

Storage Instructions

  • Store the cooled cake tightly wrapped in plastic wrap and then foil. It will keep well for up to a week at room temperature and improves in flavor a day or two after baking.
