  • 1/2 cup Fruits raisins, chopped apricots, cranberries, dried, etc. (chopped), mixed
  • 1/2 cup Nuts walnuts, almonds, chopped, etc., pecans

  • 2-3 tbsp Milk only add if the batter is too thick

Instructions
 

Prepare the Dried Fruits

  • Soak the mixed dried fruits in the fruit juice for at least 2 hours, or preferably overnight, to plump them up.

Combine Dry Ingredients

  • In a large bowl, whisk together the whole wheat flour, baking soda, baking powder, ground cinnamon, and ground ginger. Ensure there are no lumps.

Prepare the Wet Ingredients

  • In a separate bowl, combine the jaggery, yogurt, oil, and vanilla extract. Melt the jaggery in the microwave in 30-second intervals until completely melted and smooth. Whisk the mixture until well combined and smooth.

Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix. Add milk, a tablespoon at a time, if the batter is too thick.

Add Fruits and Nuts

  • Gently fold in the soaked dried fruits and half of the chopped nuts. Reserve the remaining nuts for topping.

Bake the Cake

  • Grease an air fryer-safe baking dish (approximately 8-inch square or round). Pour the batter into the prepared dish and sprinkle the remaining nuts evenly on top.
  • Pre-heat your air fryer to 160°C (320°F). Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean. Cooking times may vary depending on your air fryer.

Cool and Serve

  • Carefully remove the cake from the air fryer and allow it to cool completely in the baking dish before slicing and serving. Enjoy!
