Ingredients
Dry Ingredients
- 2 cup Whole Wheat Flour atta (approx. 400g), whole
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Cinnamon ground
- 1/2 tsp Ginger ground
Wet Ingredients
- 1 1/2 cup Jaggery firmly packed
- 3/4 cup Yogurt
- 1/2 cup Refined Vegetable Oil
- 1 tsp Vanilla Extract
- 1 cup Fruit Juice apple, or mixed fruit juice, orange
Fruits & Nuts
Optional
- 2-3 tbsp Milk only add if the batter is too thick
Instructions
Prepare the Dried Fruits
- Soak the mixed dried fruits in the fruit juice for at least 2 hours, or preferably overnight, to plump them up.
Combine Dry Ingredients
- In a large bowl, whisk together the whole wheat flour, baking soda, baking powder, ground cinnamon, and ground ginger. Ensure there are no lumps.
Prepare the Wet Ingredients
- In a separate bowl, combine the jaggery, yogurt, oil, and vanilla extract. Melt the jaggery in the microwave in 30-second intervals until completely melted and smooth. Whisk the mixture until well combined and smooth.
Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix. Add milk, a tablespoon at a time, if the batter is too thick.
Add Fruits and Nuts
- Gently fold in the soaked dried fruits and half of the chopped nuts. Reserve the remaining nuts for topping.
Bake the Cake
- Grease an air fryer-safe baking dish (approximately 8-inch square or round). Pour the batter into the prepared dish and sprinkle the remaining nuts evenly on top.
- Pre-heat your air fryer to 160°C (320°F). Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean. Cooking times may vary depending on your air fryer.
Cool and Serve
